One of Spain\’s most famous cheeses, Manchego is protected by the status of Denominacion de Origen (D.O.). The regulatory classification system requires producers to use 100% Manchega sheep milk in their traditional recipes. Manchega is a sturdy breed of sheep that traverse the rocky, arid plateau region of La Mancha.

Our Manchego is aged for 18 months, developing a slightly briny flavour and pleasant gaminess. The firm texture with small eyes provides a great chew and satisfying experience. The higher acidity in the sheep cheeses pairs well with medium to full-bodied red wines that are berry and tannin-rich.
