Kotai knives are ground to a double bevel grind, giving the edge an optimal 15 angle per side (versus 20-25 for most Western knives), perfectly balancing extreme sharpness and strength.

Their 1.8mm thin blades (2.5mm for the chopper and 1.5mm for the paring knife) allow for precise and sharp cuts, never crushing even the most delicate foods to preserve their full flavor.

In addition to the aesthetic appeal, the Tsuchime () (hammered) pattern creates tiny air bubbles between the knife and the food being cut. This ancestral Japanese method reduces resistance and thus prevents food from sticking to the blade.

All KOTAI knives are forged from Japanese 440C high carbon steel and stay sharp up to 10 times longer than other knives. 440C combines high carbon content for hardness and edge retention with the optimum amount of chromium for corrosion resistance.
