These beans come from Freddy Salazar\’s estate in Northern Ecuador. To balance this harvest\’s acidity, Freddy extended its fermentation and drying. Eric crafts his seventh Costa Esmeraldas bar to make chocolate notes shine.

Tasting notes of chocolate ganache and blueberry jam on toast.
